Chef Piombo’s cuisine starts with his goals – simple, unpretentious, and good – and becomes an artful combination of what’s fresh and local in a sometimes classic and sometimes state-of-the-art mix. These imaginative meals are served in a timbered structure with massive, barn-like details. Among them are fieldstone fireplaces with crackling fires. Raclette is melted by those fires and shaved tableside over house-made bread. Artisanal cocktails and extensive wine choices are available. So, too, are specialty deserts.
